“fried” asparagus:
asparagus for 2
1 celery stalk
1/4 c onion
some Earth Balance “butter”
whole wheat bread crumbs of your choice
salt + pepper
1/4 walnuts
PREHEAT OVEN to 375 degrees
1. melt your “butter” in a pan (I choose a glass casserole dish) while your oven is heating up.
2. remove the pan + roll your asparagus around in the butter.
3. add all your veggies to the mix + finish with your breadcrumbs, salt, pepper, + any other seasonings you may choose.
4. cover + return to oven when it hits 375….let cook for 15-20 minutes.
5. check them out (as all ovens vary), remove cover, add crushed walnuts, + return to oven for 8-10 more mins uncovered.
6. let them cool + get extra crusty/crunchy….then go ahead + indulge!!!
as for the potatoes….

olive oil
coat potatoes in oil, salt, pepper, + 375…25-30 mins…don’t feel guilty, they’re baked! ;)
